Pumpkin Pie Oatmeal
Save some pumpkin from the evening meal to make this delicious porridge or cheat and buy a tin
of mashed baby pumpkin
Ingredients
½ cup rolled oats -
½ cup water-
½ cup rice milk -
1 small banana -
¼ cup pureed pumpkin-
½ teaspoon pumpkin pie spice -
(or cinnamon & nutmeg)
1 tablespoon agave or honey - optional-
Method
Place the oats, water and milk in a saucepan over medium heat and bring
to the boil
Reduce heat and simmer gently for about 5 minutes
Add spices, sliced banana and pumpkin and simmer for another 2 minutes
Serve drizzling with the agave or honey
